Our Story

     We Welcome You to Bistro One!  Auburn’s Place to Go for Gourmet.  Auburn is home for us, and we felt it’d be the perfect location to open an upscale eatery and to share our passion for beer, wine, and food with you! We each have over 20 years of restaurant experience, including owning The Woodshed Restaurant in Lake Placid, NY, and owning, for the past 6 six years, The Cascade Grill at the south end of Owasco Lake. 

     Beer - Marc is on his way to becoming a beer cicerone (the equivalent of a wine sommelier).  He has started the Bistro One Beer Club and likes to keep a rotating list of the best craft beers.

     Wine - We have tasted thousands of wines and try to pass along to you some of our favorites. We are in the process now of purchasing grapes and producing some of our own wines...hopefully to be coming to your table this summer.

     Food - We were lucky enough to meet and hire Luke Szabo, our Head Chef.  We discovered that he has as much, if not more passion about good local food, than us.  Luke brings to the table years of cooking experience, including a stint at Lasca’s and Sheldrake Winery.  He has connections with local farmers and food purveyors that have all but eliminated the need for “big company” ordering.  Luke takes to heart the new restaurant craze of buying and eating locally.  He refuses to buy anything that he can make himself.  He makes our bread from scratch, he makes all of our pastas, sauces, and desserts by hand, he uses a house smoker to make our bacon, and he cures his own Italian meats.
